A SMALL PLOT OF LAND WHERE ONLY SANGIOVESE GRAPES HAVE BEEN PLANTED
The l’Apparita Estate is located in the hamlet of Bargino, in the municipality of San Casciano Val di Pesa, within one of the most prestigious wine regions in Italy: Chianti Classico.
Paolo has everything there in his “garden”; behind the vineyard there are woods and next to it an olive grove and vegetable garden.
The path that led him to the vineyard is nourished by those absolute flavors and aromas of our land that Paolo wanted to pay tribute, here on the estate of l’Apparita, through the 7500 Sangiovese plants.
Paolo is a curious man who loves a challenge; if he puts his passion into it, you can see he is capable of anything…d’assolo (“solo”)
His love for wine dates back many years. He is passionate, and like many, during dinners with friends he developed a refined sensitivity to taste. That passion led him from a simple curiosity to a diploma from Sommelier FISAR, then on to receiving a further degree in viticulture and enology, which he holds in addition to his degree in medicine and surgery. His first true love is for the products of the Champagne region, to which he dedicated his degree thesis and became a real importer with focus on small but precious French productions.
There is also chocolate among the Italian delicacies he has dealt with.

Paolo likes to revive the atmosphere of the grape harvests that brought together families and friends in a propitiatory party. It is now a tradition that this harvest takes place over a morning,
followed by a cheerful table where, after work, we tell each other about the say spent, the beauty of the countryside, and the passion for the land.
Something of all this passes into the wine which is enriched, not only with aromas, but also with emotions.
Something of all this enters the production process that takes place all within the estate, using the most sophisticated technologies.
Tradition and innovation are combined to pass on one of the most precious resources of the Tuscan territory.
