Sangiovese in Pure Tuscan IGT

Here, within the Chianti Classico DOCG area, Sangiovese in Tuscany finds the best growing conditions thanks to the microclimate and the diverse soil compositions.

Sangiovese is a vigorous grape, able to withstand extreme climatic conditions and which at the moment of full ripeness is expressed with great exuberance and elegance. d’Assolo is a tribute to this centuries-old vine.

Denomination: Sangiovese IGT Toscana
Grapes: 100% Sangiovese
Soil: Deep, highly evolved with a clay texture with a mixed limestone and arenaceous skeleton.
Fermentation: Alcoholic fermentation for 7 to 8 days and post fermentation maceration for about 3 weeks in two temperature-controlled steel vats
Maturation: The product remains in the steel vats for about 5 to 6 months, protected by   nitrogen to maintain the fruity notes and promote natural tartaric stabilization
Aging: One part of the product is aged in large Austrian oak barrels, the other is aged in barriques. It is an aging process that lasts a total of 2 years, extending the complexity of the wine and its range of notes and flavors. Finally, d’Assolo is aged for a further 6 months in the bottle before being put on the market
Organoleptic Examination: Balanced and equilibrated ruby red color. An elegant wine that expresses itself with intense aromas, cherry, jujube, blueberry, and black cherry under spirits. Notes that also focus on fresh aromas such as thyme and bay leaf for an elegant Sangiovese, without harshness. A pleasant and gentle taste that satisfies the glass.
